Applesauce Muffins

We interrupt our regularly scheduled programming for muffins.


The beginning of the quarter is always so busy, I never have time for much. I did manage to make some cupcakes (lemon with blackberry whipped cream) for a big Lolita picnic a week ago, but I was in such a hurry making them that I didn't have a chance to take pictures, and they were devoured so quickly I didn't get one at the meetup, either.

My poor roommate is having an even worse time right now than me--on top of classes, she's in so many musical groups she doesn't have a spare moment on weekends. Normally, she makes these tasty, quick muffins herself, but today I decided to make them for her. Continue for the recipe...

Taryn's Applesauce Muffins

½ cup (1 stick) butter, melted
1 egg
1 cup applesauce
½ tsp vanilla
1 cup granulated sugar
1 cup self-rising flour*
½ tsp baking soda
½ tsp ground allspice
½ tsp ground cinnamon
½ tsp ground cloves

Preheat oven to 350 degrees.

Whisk together the dry ingredients. Add the wet ingredients, and stir until just combined. Fill lined or greased muffin tins ¾ of the way full (about a quarter cup per muffin), and bake for 20 minutes, or until a toothpick comes out mostly clean.

*You can make your own self-rising flour by sifting together 1 cup flour, 1 ½ teaspoons baking soda, and ½ teaspoon salt into a small bowl and re-measuring for the recipe.
